The longer the coffee bean is roasted, the darker the roast, and also the less acidity will be found in the drink. The lightest roasts are generally referred to as light, medium, or even dark. There is no industry-wide standardization of roast names so it can be confusing when you’re buying beans at your local coffee shop or supermarket.
To add to the confusion, different coffee-growing regions have their own favorite roast profiles. For example, South Americans generally prefer lighter roasts because they want to taste the unique flavors of their coffee beans. Central Americans and Africans often prefer medium roasts because they find them more balanced and less bitter. Europeans have a tradition of dark roasting which brings out more of the body or mouthfeel of the coffee.
