## How to Decide What Roast to Buy
When it comes to coffee, there are four main roast categories that most beans fall into: light, medium, dark, and extra dark. But what does that mean? Let’s break it down.
Light Roasts
Light roasted coffees are lighter in color and have a milder flavor with no oily surface because they aren’t roasted for very long. They maintain more of the original coffee bean flavor since roasting brings out the natural sweetness, bitterness, and acidity. Light roasts also have higher caffeine content since caffeine is burned off during the roasting process. Common light roasts include Half City Roast and Cinnamon Roast.
Medium Roasts
As you move into medium territory, the coffee beanswill be darker in color with a surface that isn’t oily anymore because they have been roasted for longer. The longer roasting time also means that more of the original bean flavor has been sacrificed for the sake of bringing out natural sweetness, bitterness, and acidity. Medium roasts usually have a balanced flavor and are versatile enough to be used for different brewing methods. American roast and Breakfast roast are two examples of medium roasts..
Dark Roasts
The next step up is dark roast coffees — these beans are very dark brown or even black in color with an oily surface because they have been roasted for an extended period of time. The extended roasting time results in less of the original coffee bean flavor remaining since acids and sugars have been caramelized and burned off. Dark roast coffees also have less caffeine content than their lighter counterparts since caffeine is burned off during the roasting process.. Some common dark roasts include Full City Roast, High Roast, Continental Roast , New Orleans Roast , European Roast , Espresso Roast , Viennese Roast , Italian Roast , French Roast .
